Citrus Raspberry Sugar Cookies

Ingredients:

For the Cookies:

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/4 cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • Zest of 1 orange

For the Raspberry Glaze:

  • 1 cup fresh raspberries
  • 1 cup powdered sugar
  • 1 teaspoon lemon juice

Instructions:

For the Cookies:

  1. In a medium-sized bowl, whisk together the flour, baking powder, and salt. Set aside.

  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.

  3. Add the egg, vanilla extract, lemon zest, and orange zest to the butter-sugar mixture. Mix until well combined.

  4. Gradually add the dry ingredients to the wet ingredients, mixing until the dough comes together. Be careful not to overmix.

  5. Divide the dough in half and shape each half into a disc. Wrap them in plastic wrap and refrigerate for at least 1 hour, or until the dough is firm.

  6. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

  7. Roll out the chilled dough on a lightly floured surface to about 1/4-inch thickness. Use cookie cutters to cut out your desired shapes and place them on the prepared baking sheets, leaving some space between each cookie.

  8. Bake for 8-10 minutes, or until the edges of the cookies are just starting to turn golden. Be careful not to overbake. The baking time may vary depending on the size and thickness of your cookies.

  9. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.

For the Raspberry Glaze:

  1. In a blender or food processor, puree the fresh raspberries until smooth.

  2. Strain the raspberry puree through a fine-mesh sieve to remove seeds.

  3. In a bowl, whisk together the powdered sugar and lemon juice.

  4. Add the raspberry puree to the powdered sugar mixture and whisk until smooth and well combined.

Assembly:

Once the cookies are completely cooled, drizzle or spread the raspberry glaze on top of each cookie. You can also add some additional lemon or orange zest on top for extra flavor and decoration.
